This spinach recipe is so delicious I can cook it almost every day! Very tasty recipe!
Ingredients:
- 2 cups fresh spinach
- 1 chopped onion
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1/2 cup coconut cream
- Salt and pepper to taste
Instructions:
- Heat a large skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
- Add the fresh spinach to the skillet. Cook, stirring occasionally, until the spinach is wilted, about 2-3 minutes.
- Pour in the chicken broth and bring to a simmer. Allow the mixture to simmer for 5 minutes to allow the flavors to meld.
- Stir in the coconut cream until well combined. Let the mixture simmer for an additional 2-3 minutes.
- Season with salt and pepper to taste, adjusting as needed.
- Once the spinach is tender and the flavors are well blended, remove the skillet from the heat.
- Serve the creamy coconut spinach as a side dish or over rice for a delicious and satisfying meal.
